How To: Pumpkin Spice Overnight OatsWHAT YOU NEED:

  • 1/2 cup rolled oats
  • 1/3 cup Greek yogurt
  • 2/3 cup almond or coconut milk
  • 1 tablespoon chia seeds
  • 1/2 tsp. vanilla extract
  • 2 tbs. maple syrup
  • 1/2 cup pumpkin puree
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • Pinch of salt
  • Almonds or cinnamon stick for garnish

 

How To: Pumpkin Spice Overnight Oats

WHAT TO DO:

  1. In a bowl, mix together all ingredients.
  2. Scoop mixture into a jar or container with airtight lid.
  3. Let refrigerate overnight.
  4. Top with almonds and cinnamon stick.*
  5. Enjoy!

DIY Key Lime Yogurt Popsicles

WHAT YOU NEED:

  • 4 graham crackers
  • 2 tablespoons butter, melted
  • 1 1/2 cups plain Greek yogurt
  • 4 tablespoons honey
  • 3 limes, juiced
  • 2 limes, zested

  1. Crush graham crackers in a ziplock bag or food processor until fine. In a small bowl, combine with melted butter.
  2. In a medium bowl, combine the yogurt, honey, lime juice and zest. Whisk until smooth.
  3. Pour mixture evenly into popsicle molds, with 3/4 inch room left at the top.
  4. Lightly sprinkle graham crackers onto each popsicles, patting down to ensure they stick.
  5. Insert popsicle sticks and freeze until solid, around 4 hours.
  6. Enjoy!

4th of July Mocktail Recipe

4th of July is a Tuesday this year… take it easy with this pretty mocktail! Mix up summer fruit and fresh flavors for a refreshing drink that’s all red, white and YUM.

WHAT YOU NEED:

  • Club soda
  • Lemon lime soda
  • 3/4 tsp. grenadine
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • Starfruit slice (for garnish)
  • Ice

WHAT TO DO:

  1. Place raspberries in the bottom of the glass.
  2. Pour grenadine on top of raspberries.
  3. Muddle raspberries and grenadine until slightly crushed.
  4. Fill the glass 1/2 of the way with ice and pour club soda until the glass is 3/4 full. 4th of July Mocktail
  5. Slowly add lemon lime soda to the glass, continuing to create a layered look.
  6. Place  blueberries on top.
  7. Garnish the rim of your mocktail with a slice of starfruit.

Be the best you with these healthy cranberry almond granola bars. Packed with protein and vitamins, these energy-boosting snacks will keep you feeling satisfied and full of pep for yoga class, work or whatever comes your way!

Healthy Cranberry Almond Granola Bar Recipe

WHAT YOU NEED:

  • 2 cups whole almonds, roasted or raw
  • 2/3 cups dried cranberries
  • 2/3 cups puffed rice cereal
  • 1/2 cup coconut flakes (unsweetened)
  • 1 tbs. hemp seeds*
  • 1/3 cup brown rice syrup
  • 2 tbs. honey
  • 1 tsp. vanilla extract

*Optional, may substitute chia or flax seeds

Healthy Cranberry Almond Granola Bar Recipe

WHAT TO DO:

  1. Line an 8×8 baking sheet with parchment paper.
  2. In a large mixing bowl, combine dry ingredients and mix thoroughly.
  3. In a small saucepan, combine brown rice syrup, honey and vanilla over medium-high heat.
  4. Bring mixture to a boil, stirring occasionally for about 5 minutes or until temperature reaches 260°.
  5. Pour it over dry mixture, stirring quickly to coat all ingredients evenly.
  6. Quickly pour mixture into a lined baking sheet, pressing firmly into an even layer.
  7. Let bars cool to room temperature (about 30 minutes), then lift parchment paper from dish.
  8. On a cutting board, cut the form into bars.
  9. Store in an airtight container for up to 10 days.
  10. ENJOY!
