AEO Lake Powell Travel Diary

With its beautiful landscapes painted in orange and red tones as well as the many activities on land and water, Lake Powell has become a very popular vacation spot. Casey, Melissa, and I couldn’t wait to explore the area so we packed up the car in LA and hit the road for an epic weekend getaway.

When we got to Lake Powell we did some hiking through some of the most unique landscapes we’ve ever seen. One stop we made on our hike was the Rimrocks Hoodoos where mushroom shaped rock formations stick straight up out of the ground.

Next up on our list was one place I have been dying to see, Antelope Canyon. We took a tour through the lower canyon with smooth sandstone walls made over time by wind and water. There were even dinosaur footprints at the end of the canyon!

After all of the hiking we needed to refuel so we stopped at a Thai restaurant in town called Dara Thai Express. After we refueled we threw on our swimwear and hit the water. With the beautiful blue water and surrounding landscapes it really felt like we were on another planet.

To end our first day of adventuring, we decided to go to a lookout spot very close to the Glen Canyon Dam. We sat along the edge of one of the cliffs, listened to some tunes and watched the sunset — truly a moment I’ll never forget. Once it started getting dark we headed over to Bonkers Restaurant and had some amazing dinner before we called it a night.

The next morning, we grabbed breakfast at Ranch House Grill and then headed to Horseshoe Bend to catch some early morning light. It was a little cold outside so we grabbed a few sleeping bags and set them up right next to the edge of this beautiful windy canyon where we watched the many boats on the river below us float by.

The last spot was something straight out of a movie. Just off a little dirt road is a huge cliff face called Coal Mine Canyon. The canyon overlooked colorful rock formations scattered throughout the vast desert landscape. We opened up our map and decided to do some exploring. Around every corner was something new and unique. We could’ve explored the area forever!

Lake Powell is definitely a place to add to your travel bucket list. There is so much to do and so many beautiful places to see!

Some of our favorite trends this season are tassel & lace details and neutral color-mixing, and this week, you showed us that you’re into these looks, too. Breezy kimonos, off-the-shoulder silhouettes & button down shirts are great toppers to both shorts and jeans.

Adding accessories like slip-on sneakers and high-tops or a great fringe bag and sunglasses won our hearts. Plus, cool denim jackets and bombers were essential to your looks (and work well for layering when nights get chilly). Keep scrolling to see the best #AEOSTYLE looks of the week.

AEO Laguna Beach Travel Guide

Laguna Beach is absolutely one of my favorite places in Southern California. From its beautiful crystal clear beaches to its abundant art and music scene, it is definitely a locale to put on your travel list. Lauren, MK and I went on a day trip to explore the town, its beautiful scenery and all the culture it has to offer.

AEO Laguna Beach Travel Guide

We started with a short hike to Table Rock, a beach with a beautiful little cove. The weather was amazing and we explored the area and had some fun before we headed to The Montage Resort. Just below the resort was another beach cove and we took the opportunity to snap some photos before we grabbed lunch at La Sirena.

Next up was a fun little flower shop named Browne’s Flowers. One of the best things about California is the abundance of fresh flowers and flower shops. After snagging a few bouquets we headed down the road to Main Beach. With amazing views including a Gazebo perched on top of one of the many sea cliffs it’s no wonder this is one of the most popular beaches in Laguna.

AEO Laguna Beach Travel Guide

We rinsed the sand off our feet and were off to our third beach of the day, Crescent Bay. This is one of my favorite areas in Laguna. Perched up on the cliffs we took in the majestic views of turquoise colored water, white beach sand, and countless tall palm trees making it one of the most amazing photo spots.
AEO Laguna Beach Travel Guide

We drove along the coastline to Newport Coast for ice cream at B.Candy. With its bright and vibrant exterior you can’t miss it! With ice cream cones in hand, we continued along the coast and had to stop when we saw a gorgeous bright orange old school VW bus. We chatted up the owner as he talked about the hard work he had put into restoring it. Talk about the ultimate road trip vehicle!

Our day was coming to a close but we couldn’t leave Laguna without having dinner at Brussels Bistro.

Laguna Beach may seem like just another beach town but it is one of my favorite places to visit. Have you ever been to Laguna? If so, tell me some of your favorite spots in the comments! Or, share your favorite beach destination for a perfect getaway adventure below!

How to Make Chicken Tacos

What better way to celebrate Cinco de Mayo than with tacos? You can also easily transform this recipe into a burrito bowl by serving it over rice or into a taco salad over a bed of greens— whatever you want!
How to Make Chicken Tacos

For the salsa:
1 cup of pineapple, diced
1 cup of grape tomatoes, sliced
1/2 small red onion, sliced thinly
1 jalapeño (seeds removed), diced
1 large red bell pepper, diced
1/2 bunch of cilantro, chopped
2 tbsp juice

How to Make Chicken Tacos

For the chicken:
1 lb chicken (breasts or tenders)
1 lime, juiced
2 tbsp olive oil
1 tsp chili powder
1/2 tsp paprika
1/4 tsp cayenne
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt (optional for serving)

How to Make Chicken Tacos

Optional for serving:

1] To make the chicken, combine the spices and lime juice in a small dish. Season the chicken with the spice rub and allow it to marinate in the fridge for at least an hour.
2] Combine bell pepper, onion, jalapeño, tomato, pineapple and cilantro in a medium-sized mixing bowl. Squeeze in the lime juice and mix to combine. Set aside or place in the fridge.
3] Cook the chicken in a skillet on medium-high heat until it’s cooked through and no longer pink, about four minutes per side. Cut the chicken into bite-sized pieces, assemble your tacos and eat up!
