Easy No-Churn Vanilla Ice Cream Recipe

Ice cream is always an easy decision. DIY and celebrate National Ice Cream Day with this easy recipe! Read on to see how you can make your fave dessert right at home.

WHAT YOU NEED:

  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1 tsp fresh vanilla bean (2 pods)
  • 1 tsp pure vanilla extract

WHAT TO DO:

  1. Whip heavy whipping cream with a hand mixer or in a standing mixer until peaks form.
  2. Gently fold condensed milk into whipped cream.
  3. Scrape the seeds from inside the vanilla bean pods and add them to the mixture.
  4. Mix in vanilla extract, making sure to combine all ingredients evenly.
  5. Pour into a loaf container.
  6. Freeze until firm.
  7. Scoop & serve.
  8. ENJOY!

4th of July Mocktail Recipe

4th of July is a Tuesday this year… take it easy with this pretty mocktail! Mix up summer fruit and fresh flavors for a refreshing drink that’s all red, white and YUM.

WHAT YOU NEED:

  • Club soda
  • Lemon lime soda
  • 3/4 tsp. grenadine
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • Starfruit slice (for garnish)
  • Ice

WHAT TO DO:

  1. Place raspberries in the bottom of the glass.
  2. Pour grenadine on top of raspberries.
  3. Muddle raspberries and grenadine until slightly crushed.
  4. Fill the glass 1/2 of the way with ice and pour club soda until the glass is 3/4 full. 4th of July Mocktail
  5. Slowly add lemon lime soda to the glass, continuing to create a layered look.
  6. Place  blueberries on top.
  7. Garnish the rim of your mocktail with a slice of starfruit.
  8. ENJOY!

Strawberry Pink Lemonade Popsicle Recipe

We combined two classic summer staples into one refreshing must-have for any sunny day. Read on to find out how to make your own!

Strawberry Pink Lemonade Popsicle Recipe

WHAT YOU NEED:

  • Pink lemonade (see lemonade/water ratios below)
  • Coconut water
  • 6 strawberries
  • 1 tsp. lemon zest
  • 10 wooden popsicle sticks
  • 1 popsicle mold (holds 10 popsicles)

WHAT TO DO:

  1. De-stem and thinly slice strawberries. Set half aside.
  2.  Combine 2 parts pink lemonade to 1 part coconut water.
  3. Muddle half of the strawberries and mix them into the liquid.
  4. Zest a fresh lemon and add half of the zest to the mixture.
  5. Pour mixture  into popsicle molds, leaving space at the top for expansion.Strawberry Pink Lemonade Popsicle Recipe
  6. Carefully place leftover sliced strawberries (2-3 slices per popsicle) into molds.
  7. Sprinkle additional lemon zest on top of the molds.
  8. Carefully place wooden popsicle sticks in the middle of each mold.
  9. Freeze until they’re solid, or overnight.
  10. ENJOY!

WHAT YOU NEED:

  • 1 coconut
  • Plain or greek yogurt
  • Chia seeds
  • Granola
  • Fruit (we used raspberries and blueberries!)
  • Nuts*
  • Edible flowers (optional)

  1. Cut coconut in half and clean out the inside.
  2. Save the fresh coconut pieces.
  3. Fill each half of the coconut bowl with yogurt.
  4. Top the yogurt with fresh coconut pieces, chia seeds, granola, fruit and nuts of your choice.
  5. Garnish with edible flowers and serve.
  6. Enjoy!

WHAT YOU NEED:

  • 2 cups whole almonds, roasted or raw
  • 2/3 cups dried cranberries
  • 2/3 cups puffed rice cereal
  • 1/2 cup coconut flakes (unsweetened)
  • 1 tbs. hemp seeds*
  • 1/3 cup brown rice syrup
  • 2 tbs. honey
  • 1 tsp. vanilla extract

*Optional, may substitute chia or flax seeds

WHAT TO DO:

  1. Line an 8×8 baking sheet with parchment paper.
  2. In a large mixing bowl, combine dry ingredients and mix thoroughly.
  3. In a small saucepan, combine brown rice syrup, honey and vanilla over medium-high heat.
  4. Bring mixture to a boil, stirring occasionally for about 5 minutes or until temperature reaches 260°.
  5. Pour it over dry mixture, stirring quickly to coat all ingredients evenly.
  6. Quickly pour mixture into a lined baking sheet, pressing firmly into an even layer.
  7. Let bars cool to room temperature (about 30 minutes), then lift parchment paper from dish.
  8. On a cutting board, cut the form into bars.
  9. Store in an airtight container for up to 10 days.
  10. ENJOY!
